Not sure if I quite get the question. 

If you have a 12 string guitar.

Yes you can take the octave strings off, but you're going to need a full setup.

Especially on the trussrod which is counter acting pull of 12 not 6, so lots of adjustments needed.

Can you got from a 6 string to a 12 string, guitar body probably not designed to take the strength of 12 strings, after you get past the bridge and tuners required
