Why would you turn up your guitar volume all the way up and then adjust your amp volume and tone.

You have no where to go on the guitar except down

Turn your guitar volume and tone to 5.

Then adjust the amp volume and tone. 

Now you have somewhere to go with the guitar controls

I use this same argument with my guitar instructor.  She insists the volume should be all the way up on the guitar. I personally am with you on this issue.

I'd agree with you if you're playing clean tones only. For more overdriven tones, if the volume is set to 10 it's way easier to get your amp to break up and way easier to clean it up when you need to by rolling the volume off. Set to 5 in this case wouldn't work so well.

@Ice9 you missed the point

put the guitar on 5, set the amp for tone and volume. 

Then if you want over driven, turn the guitar to 10, don't have to fiddle around with the amp.

You want to clean up, turn guitar back to 5ish

If you have your guitar maxed out you can't get any louder than 10 on it which is were you started.

You will only be able to go quieter 

It's like driving your car with your foot to the floor can't go faster only slower
